RESUMO
Os hábitos alimentares fazem parte da vida cotidiana das sociedades humanas. Por isso, a História da Alimentação se exprime pela investigação dos usos e costumes das sociedades. O que envolve a análise de comportamentos tradicionais, herdados, mas também o reconhecimento da associação desses comportamentos a fenômenos de adaptação, ou mesmo de invenção cultural. Por sua vez, o afastamento dos hábitos alimentares cotidianos configura um espaço privilegiado para análise dos embates entre as expectativas inerentes aos esforços por reproduzir os hábitos cotidianos e as resoluções concretas de adaptação. A colonização da América portuguesa foi acompanhada por um esforço sistemático por reproduzir os modelos alimentares de referência dos povos colonizadores. Este artigo pretende recuperar o caminho percorrido por um sistema cultural para a escolha de um alimento substituto, proveniente de outro sistema cultural, e as estratégias utilizadas para superação das limitações culturais existentes para sua incorporação.

ABSTRACT
Eating habits are part of the daily life of human societies. For this reason, the History of Food is expressed through the investigation of the uses and customs of societies. This involves the analysis of traditional, inherited behaviors, but also the recognition of the association of these behaviors with adaptation phenomena, or even cultural invention. The impossibility of reproducing daily eating habits constitutes an important space to analyze the clashes between expectations present in efforts to reproduce daily habits and concrete resolutions for adaptation. The colonization of Portuguese America was accompanied by a systematic effort to reproduce the reference food models of the colonizing peoples. This article intends to recover the trajectory of a cultural system in the choice of a substitute food, coming from another cultural system and the strategies used to overcome the existing cultural limitations for its incorporation.
